【熟豆沖煮參數】


烘焙:半熱風

焙度:淺焙

建議養豆天數:5~8天

〔Espresso〕

20-20.5g咖啡粉
38-42g濃縮
25-28秒
93.5沖煮水溫


〔Filter〕

△ 以15g咖啡豆萃取240ml咖啡液的比例為基準,再依喜好調整濃淡。
△ 中等粗細研磨,約莫是砂糖的顆粒大小,流速順暢不堵塞即可。
△ 沖煮水溫控制:90~91度
△ 少量水預浸悶蒸30秒,接下來沖煮過程可分3~4次注水,增加萃取率。
△ 整體沖煮時間2分15秒左右。
△ 建議養豆5~8天,萃取較穩定,風味也會比較完整。
